White crystal or crystalline powder, odorless, sweet taste. Relative density 1.752 (anhydrous), 1.524 (dihydrate), melting point 225~227°C (anhydrous), 218°C (dihydrate), boiling point 319°C. Soluble in water (25°C, 14g/100mL; 60°C, 28g/100mL), slightly soluble in ethanol, glacial acetic acid, ethylene glycol and glycerin, insoluble in ether, acetone and chloroform. Stable in air, stable to heat, strong acid and alkali, but easy to absorb moisture.
Used as a biochemical reagent, also used in pharmaceuticals and organic synthesis.
